How To... Make a Pizookie--Alanah


For those of you that haven’t tried a pizookie, especially from BJ’s Restaurant, you’re
missing out on one of the greatest desserts ever made. The old latin term literally means “best dessert in the world”, so you should definitely try to make this at home. The word pizookie is a combination of the words cookie and pizza, but it isn’t actually a cookie and a pizza. It is a scoop of ice cream on top of a big, warm cookie in a deep dish skillet, topped with hot fudge. The name comes from the large size of the cookie; the typical size of a small pizza. I’ll teach you the basic steps to make a chocolate chip pizookie for just two people, but once you master the recipe you can change the flavors and the size. Some other good flavors to try would be the oreo pizookie, the peanut butter pizookie, or even the brownie pizookie (one of my favorites). I also like to add caramel on top (something you should consider trying!).
The tools you will need to make this are a 6.25 inch cast iron skillet, 1⁄2 and 1 tablespoon measurements, 1⁄8, 1⁄4, and 1 teaspoon measurements, 1⁄4 and 1⁄3 cup measurements, a medium bowl, a 1 quart sauce pan, a whisk, and an ice cream scooper.

Ingredients:
For the Chocolate Chip Cookie
  1. Unsalted butter- melted and slightly cooled
  2. Egg yolk
  3. Brown Sugar
  4. Vanilla Extract
  5. All-Purpose Flour
  6. Baking Powder
  7. Salt
  8. Semisweet Chocolate Chips
For the Hot Fudge
  1. Unsalted butter
  2. Heavy (whipping) cream
  3. Granulated Sugar
  4. Vanilla Extract
  5. Chopped Semisweet Chocolate Chips
  6. Salt
  7. Vanilla Bean Ice Cream (for serving)
Instructions:
To Make the Chocolate Chip Cookie
  1. Preheat the oven to 350 degrees fahrenheit.
  2. In the medium bowl, whisk 2 tablespoons of melted butter, 1 large egg yolk, 1⁄4 cup of
    brown sugar, and 1⁄4 teaspoon of vanilla extract.
3. Stir in 1⁄4 cup of all-purpose flour, 1⁄8 teaspoon of baking powder, and a pinch of salt.
a. Stir
in the ingredients a little bit at a time so that the mixture isn’t overwhelmed
with dry ingredients.
4. Start
to fold in 1⁄3 cup of the semisweet chocolate chips.
a. Again, fold the chocolate chips in gradually.
  1. Spray non-stick spray in the skillet and then spread the batter into it.
  2. Put the skillet in the oven for about 17-21 minutes, or until the top of the cookie loses its
    shiny (undercooked) appearance.
a. Also make sure that the middle of the cookie is cooked thoroughly (or to your
liking). A lot of the times the middle comes out too doughy, so make sure to check with a toothpick. If some dough sticks to the toothpick when you stick it in the middle, then it needs more time in the oven. Keep checking the cookie every two minutes if you leave it in.
7. Allow the cookie to cool for about 5 minutes. To Make the Chocolate Fudge
  1. Put the 1 quart sauce pan over medium heat and combine 1 tablespoon of butter, 1 tablespoon of heavy cream, 1 tablespoon of granulated sugar, and 1⁄4 teaspoon of vanilla extract. Stir this mixture until the butter is melted and it begins to simmer.
  2. Reduce the heat to medium-low and add 3 tablespoons of chopped semisweet chocolate chips and a pinch of salt. Whisk this mixture until the chocolate is melted completely and when the mixture is smooth.
a. Make sure to pay close attention to the sauce so that it does not burn the chocolate!
3. Add 1⁄2 tablespoon of heavy cream, only half a teaspoon at a time, until the fudge sauce reaches its desired consistency. Then, remove the saucepan from the heat.
Serving
  1. Put 1 (or 3) large scoop of vanilla bean ice cream on top of the chocolate chip cookies and pour the hot fudge sauce all over the top.
  2. Enjoy!!!
This is what your finished result will look like! Remember, it may not come out perfectly the first time you bake this. When I first made the chocolate chip pizookie I didn’t check the batter with the toothpick and it came out way too doughy. Even though it looked ready, it tasted like batter. I also burnt my chocolate fudge so I had to start all over again. It took me a few times until I got it the way that I like. So, don’t be discouraged, it is a very delicious treat!

  4. I came into this not fully knowing what a pizookie was. I imagined it as some sort of pasta calzone type delicacy. I myself prefer salty and savory but i will make sure to make this for my mom. She loves sweets. I'm not too good at baking but your comprehensive guide, I'm sure she'll love it
