Liz--Cheesecake Nibbles

Now that it’s the end of the year and everyone is talking about how stressful or how easy this year has been for them, why not just forget about that for just a moment and enjoy some cheesecake nibbles. These are always so much fun to make since almost everyone loves to make sweets and if not at least eating them. You can always have your mom make them if you’re too lazy to.

What you will need:
·      foil baking cups (2-inch)
·      vanilla wafer cookies
·      “(10 ounce package) Nestle Toll House Semi- Sweet Chocolate & Premier White Morsels” (You could use white morsels or just regular chocolate morsels if wanted)
·      cream cheese (room temperature)
·      granulated sugar
·      all-purpose flour
·      large eggs
·      vanilla extract

First, preheat your oven to 350ᵒF. Now you can place 36 of your foil baking cups on a baking sheet. You will need to put 1 vanilla wafer cookie, flat-side down, on the bottom of each one of your baking cups. Then place about 5-6 morsels (or to your preference) on each wafer.
Put in 2 packages (8 ounces each) of cream cheese, 2 tablespoons of flour and ⅟₂ a cup of sugar in a sizeable bowl that’s large enough and batter together until it is creamy. Add 2 eggs and 1 teaspoon of vanilla extract. Batter it well. Once you’re done put a heaping tablespoon of your mixture into each foil baking cup.
Once you’re all done put it to bake for 16 minutes or until it is just set. Be sure that it isn’t browned. When you freshly take it out of the oven and it’s still warmed decorate the top with some of the remaining morsels. The morsels will still keep its shape and soften just a bit. Cover your cheesecake nibbles and refrigerate until they are completely cooled. The recipe makes 3 dozen of these petite cheesecakes.
