Arroz
con leche in English means rice with milk aka Rice pudding, the name may throw
you off and disgust you but don’t be. Arroz con leche originated from Spain but
it is made all over spanish speaking countries. My mom is a big fan of this and
she loves to cook it when there's a special occasion. My grandma would cook
this for my mom when she was younger and eventually would teach her how to cook
it. It is the perfect dessert for when
it’s cold or when it’s hot outside. It tastes good when it’s warm or cold.
Arroz con leche is a very simple dessert to cook and anyone can cook it if they
follow these simple steps. Here are the ingredients and steps to make it.
Ingredients
● 2 cups of long-grain white rice
● 8 cups of whole milk
● ¾ cup of granulated sugar
● 1 (12 ounce) can of evaporated milk
● 1 fresh vanilla bean
● Condensed milk
● 2 small cinnamon sticks
● Ground cinnamon
● 1 egg
Directions
1. Get a saucepan so you can put the
rice in it to boil. This is where the dessert will be made.
2. Now put the saucepan on the stove
and cook over medium heat. Afterwards place water, rice, and cinnamon sticks
into the saucepan.
3. Boil and cook the rice for about 15
minutes until it is tender.
4. Once the rice is tender, stir it in
milk until they are mixed together perfectly.
5. Let the milk boil for about 5 minutes before adding more
milk into the pan.
6. Next step is to stir the evaporated
milk along with the regular milk to give it more of a texture.
7. Also add condensed milk and stir it
along with the evaporated milk to give it a little more flavor.
8. Add sugar to the mixture (Make sure
you don’t add to much because it can make it more sweeter than it needs to be)
Add about a spoonful into the pan.
9. Now, cook for an additional 10 to 15
minutes or until you see that the rice has a pudding-like texture.
10.The arroz con leche is now ready!
People usually add a sprinkle of cinnamon to give it more flavor and also
because it is tradition to add a sprinkle of cinnamon to it after it is
ready.

Arroz con Leche has been in my life for as long as I can remember and to see someone writing about this for February I couldn't help but to feel so nostalgic and excited.
